Ingredients (Makes about 12 puffs)
- 2 cups mashed potatoes (leftover or freshly made, cooled)
- 2 eggs
- ½ cup shredded cheese (cheddar, mozzarella, or Parmesan)
- ¼ cup milk (or heavy cream for extra richness)
- ¼ cup green onions or chives, finely chopped
- ½ tsp garlic powder (optional, for extra flavor)
- Salt & black pepper, to taste
- ½ cup panko or breadcrumbs (for extra crispiness, optional)
Instructions
1. Preheat & Prep
- Preheat your oven to 400°F (200°C).
- Grease a muffin tin or line with parchment cups.
2. Mix the Ingredients
- In a bowl, whisk the eggs and milk together.
- Add the mashed potatoes, cheese, green onions, garlic powder, salt, and pepper. Mix well.
- If the mixture feels too soft, add 1-2 tbsp flour or breadcrumbs for better structure.
3. Fill & Bake
- Spoon the mixture into the muffin tin, filling each cup ¾ full.
- Sprinkle with extra cheese or breadcrumbs on top for a crispy finish.
- Bake for 20-25 minutes, until golden brown and crispy on the edges.
4. Serve & Enjoy
- Let them cool slightly before removing from the tin.
- Serve warm with sour cream, ranch, or ketchup!
