Mashed Potato Puffs


 


These crispy, cheesy mashed potato puffs are the perfect way to use leftover mashed potatoes! They’re fluffy on the inside, golden on the outside, and packed with flavor. Perfect as a side dish, appetizer, or snack!


Ingredients (Makes about 12 puffs)

  • 2 cups mashed potatoes (leftover or freshly made, cooled)
  • 2 eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or Parmesan)
  • ¼ cup milk (or heavy cream for extra richness)
  • ¼ cup green onions or chives, finely chopped
  • ½ tsp garlic powder (optional, for extra flavor)
  • Salt & black pepper, to taste
  • ½ cup panko or breadcrumbs (for extra crispiness, optional)

Instructions

1. Preheat & Prep

  • Preheat your oven to 400°F (200°C).
  • Grease a muffin tin or line with parchment cups.

2. Mix the Ingredients

  1. In a bowl, whisk the eggs and milk together.
  2. Add the mashed potatoes, cheese, green onions, garlic powder, salt, and pepper. Mix well.
  3. If the mixture feels too soft, add 1-2 tbsp flour or breadcrumbs for better structure.

3. Fill & Bake

  1. Spoon the mixture into the muffin tin, filling each cup ¾ full.
  2. Sprinkle with extra cheese or breadcrumbs on top for a crispy finish.
  3. Bake for 20-25 minutes, until golden brown and crispy on the edges.

4. Serve & Enjoy

  • Let them cool slightly before removing from the tin.
  • Serve warm with sour cream, ranch, or ketchup!

Tips & Variations:

🧄 Garlic Herb Puffs → Add roasted garlic and fresh herbs for extra flavor.
🥓 Loaded Potato Puffs → Mix in crumbled bacon and more cheese.
